On a girls weekend with my Mum to the Naramata Bench in the British Columbia Wine Country, we came across this beauty of a wine! Perfect for a sunny Summer evening laughing with friends! And of course, my Mum's Nanaimo Bar recipe which in my opinion are the BEST Nanaimo bars in the world! Mum Majnik's Nanaimo Bars

Ingredients for Base:

1/2 cup butter

1/4 cup sugar

tbsp cocoa

1 cup shredded coconut

1 tsp vanilla

1 egg

2 Cups graham wafter crumbs

1/2 cup chopped walnuts

Directions:

Place softened butter, sugar, cocoa, vanilla and egg in pot and place on low heat to melt the butter and until mixture resembles a thick pudding. Add wafer crumbs, coconut and walnuts, blend well. Mix into first mixture and pack evenly in a 9" pan. Place in fridge to cool.

Ingredients for Icing:

1/4 cup butter

3 tbsp milk

2 tbsp vanilla pudding powder

2 cups icing sugar

4 squares semi-sweet chocolate

1 tbsp butter (to melt with chocolate)

Directions:

Cream 1/4 cup butter with milk and pudding. Blend in icing sugar. Spread over chocolate base, place back in fridge for 15 minutes. Melt chocolate squares with 1 tbsp butter, spread over icing that has now cooled. Place back in fridge until set, and cut into squares when ready to eat!
